Ingredients
- ¾ cup butter
- 1 ¾ cups flour, divided
- 1 tablespoon sugar
- 6 eggs, separated
- 1 cup evaporated milk
- 2 ¾ cups sugar
- 8 cups rhubarb, diced
- 1 teaspoon vanilla
Directions
Preheat oven to 350°. Lightly grease a 9x13 pan. In bowl, combine butter, 1 1/2 cups flour and 1 tablespoon sugar, and blend with a mixer. Press mixture into pan and bake 15 minutes. In large bowl, combine 6 egg yolks, 4 tablespoon flour, milk, 2 cups sugar, and rhubarb. Stir together, pour over crust and bake for one hour until set. In bowl, beat egg whites until foamy. Beat in sugar and vanilla until forms soft peaks. Spread over cake and bake additional 10-20 minutes. |
