Ingredients

  • 1 pork tenderloin
  • 2 tablespoons olive oil
  • ½ cup onion, chopped
  • 1 tart apple , peeled and chopped
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • ½ cup apple juice or cider, or more

Directions

Rub tenderloin with rub mixture. Brown in olive oil on all sides. Remove from pan, add apple and onion. Saute until tender. Add the mustard and sugar. Cut the tenderloin like a book.
