Ingredients

  • 1.5 cups flour
  • ½ cup bread flour
  • 1 teaspoon kosher salt
  • ½ teaspoon instant yeast
  • ¾ cup lukewarm water
  • 1 tablespoon olive oil
  • 1 teaspoon honey

Directions

In food processor, pulse, flours, salt and yeast until combined. Whisk together water, oil, and honey. With processor running, pour water mixture into flour mixture, process until the dough forms a ball. Knead once or twice on a floured table. Transfer to an oiled bowl, cover tightly with plastic wrap, chill at least 24 hours or up to 3 days. Divide into 2 balls, tucking under and pinching dough closed on the bottom. Roll balls under your palm until smooth, about 30 seconds. Coat a baking sheet with cooking spray, loosely cover the dough with plastic wrap, rest in a warm place 1-3 hours.
