Ingredients

  • 3 2 lbs large red onions, peeled/thickly sliced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • cup aged balsamic vinegar

Directions

Brush onions with oil. Place onions on a single layer shallow roasting pan. Sprinkle with salt and pepper. Cover with foil and bake at 350° for 45 minutes. Uncover and roast about 40 minutes longer.
Using a spatula, transfer to serving plate. Place the pan on the stove and add vinegar to pan. Cook and stir over medium heat just until it starts to boil, scraping the pan. Spoon over onions.
