Ingredients

  • 2 large onions-sliced and then quartered, approx 3 cups
  • cup EVOO
  • 4 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • salt, pepper, cayenne pepper, to taste
  • 3 tablespoons unsalted butter, optional

Directions

Saute the onions in EVOO and butter over medium for 10 minutes with salt, pepper, and cayenne pepper. Reduce to a simmer for 20 minutes, stirring occasionally. Cool the onions. With mixer, mix the remaining ingredients. Add onions and mix well. Adjust seasoning as needed. Serve with potato chips.
