Ingredients
- ¼ cup butter
- small onion, chopped
- 1 ½ cups shredded cheddar cheese
- 12 ounces sliced mushrooms, canned
- chopped cooked ham, optional
- sliced jalapenos, optional
- 12 eggs, scrambled
- ½ cup milk
- ½ teaspoon salt
- pepper, to taste
Directions
Grease a 9x13 pan. Melt butter in skillet and cook onion until tender. Spread cheese in the bottom of the pan. Layer with mushrooms, onion, ham, and peppers. In a bowl, scramble eggs together with milk, and season with salt and pepper. Pour egg mixture over ingredients. Do NOT stir. Bake uncovered in 400° oven for 30 minutes or until no longer runny and golden brown. Allow to slightly cool, cut into squares. |
