Ingredients

  • ¼ cup butter
  • small onion, chopped
  • 1 ½ cups shredded cheddar cheese
  • 12 ounces sliced mushrooms, canned
  • chopped cooked ham, optional
  • sliced jalapenos, optional
  • 12 eggs, scrambled
  • ½ cup milk
  • ½ teaspoon salt
  • pepper, to taste

Directions

Grease a 9x13 pan. Melt butter in skillet and cook onion until tender. Spread cheese in the bottom of the pan. Layer with mushrooms, onion, ham, and peppers. In a bowl, scramble eggs together with milk, and season with salt and pepper. Pour egg mixture over ingredients. Do NOT stir.
Bake uncovered in 400° oven for 30 minutes or until no longer runny and golden brown. Allow to slightly cool, cut into squares.
