Ingredients

  • ½ cup butter
  • ¼ cup sugar
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups graham cracker crumbs
  • 1 cup flaked coconut
  • ½ cup butter
  • 3 tablespoons milk
  • 1 3 3/4 instant vanilla pudding mix, oz
  • 2 cups powdered sugar
  • 6 ounces chocolate chips
  • 2 tablespoons butter
  • 6 ounces heavy cream

Directions

Combine 1/2 c butter, sugar, cocoa, and vanilla in a double boiler. Cook over simmering water until butter melts. Stir in egg. Continue cooking and stirring until thick, around three minutes. Blend in crumbs and coconut. Press into butter 9 in square pan lined with foil.

Cream 1/2 c butter well. Stir in milk, pudding, and powdered sugar. Beat until fluffy. Spread over crust and chill until firm.

Melt chocolate and butter, add cream. Add to bars and chill.
