Ingredients
- 2 cups flour
- 1 cup whole wheat flour
- 1.5 teaspoons salt
- 1 tablespoon honey
- 1 packet of yeast
- 1.5 cups room temp water, or a bit less
- 2 tablespoons olive oil
- 1 pound ground lamb/beef mixture, or just beef
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ¾ teaspoon salt
- ½ teaspoon pepper
- lemon juice-fresh
- yogurt sauce-greek style
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 pkg crumbled feta cheese
Directions
Combine yeast, flour, salt and honey. Stir in water and oil to form a ball. Using a mixture with a dough hook, mix for 10 minutes on low. Place dough in a lightly oiled bowl and cover. Let rest 90 minutes. Punch down and divide into 8 pieces. Roll into a ball and cover 20 minutes. Preheat oven and stone if you have one to 400°. On a floured surface roll out to 1/4 thick disc. Bake one or two at a time for 3 minutes. Once cool, cut into wedges, drizzle with salt and olive oil. Bake again to crisp up. Brown meat, drain and add seasoning. Layer on platter, starting with pita wedges, meat, yogurt sauce, cuc, tomato and top with cheese. |
