Ingredients
- ½ cup refried beans
- 3 tablespoons shredded pepper jack cheese
- 1 tablespoon pickled jalapenos, chopped
- 2 teaspoons vegetable oil
- 1 small onion and 3 garlic cloves, chopped and minced.
- 1 tablespoon chili powder
- ½ teaspoon oregano
- 1 teaspoon salt, cumin, brown sugar, each
- 1 pound lean ground beef
- 2 tablespoons tomato paste
- 1 chipotle chile in adobo sauce, chopped plus 1 t sauce
- ½ cup water
- 2 teaspoons lime juice
- 9.5 ounces chips
- 4 cups shredded pepper jack cheese
- 2 jalapenos, thinly sliced

Directions
In processor combine beans, cheese and jalapeno. Pulse until smooth. Heat oil, add onion, then garlic, chili powder, cumin, oregano, and salt. Cook for one minute. Add beef and cook. Then, add paste, sugar, chili and sauce. Cook one minute. Add water and cook on low for 5-7 minutes. Stir in lime juice. Put half the chips on a 13x9. Put half the bean mixture over chips. Add beef mixture. Top with cheese, repeat layers. Bake at 400° on middle shelf for 12-14 minutes. Serve with remaining items. |
