Ingredients

  • ½ cup Panko crumbs
  • 2 teaspoons canola oil
  • 2 boneless skinless chicken breast
  • 1.5-2 teaspoon taco seasoning
  • 1 egg
  • 2 ounces cream cheese
  • ¼ cup shredded cheddar cheese
  • 2 jalapenos, minced

Directions

Heat the panko and canola in skillet to crisp. Remove from heat and add the taco seasoning. Cut a slit in the breasts. Season with salt and pepper. Combine cream cheese, shredded cheese, and jalapenos. Stuff the cream cheese mixture in the beasts. Dip in egg and then the panko mixture. Spray a baking rack and put over a pan. Place chicken on the rack and bake at 375° for 25-30 minutes.
