Ingredients

  • 6 tablespoons unsalted butter
  • 1 yellow onion-chopped
  • 4 cloves garlic-peeled
  • 3 pounds tomatoes, seeded and skinned
  • salt/pepper
  • crushed red pepper, to taste

Directions

1. In large fry pan over medium heat, melt 3 tablespoons butter. Add the onion, garlic and tomatoes, reduce the heat to low, cover and simmer 20 minutes.
2. REmove from pan, put in blender and blend until smooth. Put back into fry pan and add the remaining butter, one tablespoon at a time to blend. Season with salt and fresh pepper.
