Ingredients

  • 1 ⅓ cups sugar
  • ¼ cup cocoa powder
  • ¼ cup flour
  • 3 egg yolk
  • 12 ounces evaporated milk
  • 3 tablespoons butter
  • 3 egg white
  • 6 tablespoons sugar, or less
  • ½ teaspoon cream of tartar

Directions

In deep saucepan, combine first three dry ingredients. Beat yolks and milk together. Slowly add to saucepan. Cook over medium heat and stir with flat bottom wooden spoon until thick. Remove from heat and add the butter.
Beat in a glass bowl the whites. Gradually add the 6 tablespoons of sugar. (may not need it all) Beat until stiff. Add cream of tartar. Bake at 325° until golden brown.
