Ingredients
- 15 ounces can garbanzo beans
- ⅛ cup flat leaf parsley
- ½ cup red bell pepper, diced
- ½ cup Roma tomatoes, diced
- 2 ounces feta cheese, crumbled
- ⅛ cup red onion, finely chopped
- ½ tablespoon lemon juice
- ½ tablespoon red wine vinegar
- ¼ teaspoon grated garlic
- 1 tablespoon Greek yogurt
- salt and ground black pepper to taste
- pinch of sugar-optional
- ½ cup English cucumber, diced
Directions
Drain and rinse beans. Mix all ingredients and cucumber. Mix the dressing ingredients and pour over salad. Chill one hour. |
