Ingredients

  • 15 ounces can garbanzo beans
  • cup flat leaf parsley
  • ½ cup red bell pepper, diced
  • ½ cup Roma tomatoes, diced
  • 2 ounces feta cheese, crumbled
  • cup red onion, finely chopped
  • ½ tablespoon lemon juice
  • ½ tablespoon red wine vinegar
  • ¼ teaspoon grated garlic
  • 1 tablespoon Greek yogurt
  • salt and ground black pepper to taste
  • pinch of sugar-optional
  • ½ cup English cucumber, diced

Directions

Drain and rinse beans. Mix all ingredients and cucumber. Mix the dressing ingredients and pour over salad. Chill one hour.
