Ingredients

  • 2 15 oz can chickpeas, drained and rinsed
  • 4 cups fresh spinach, loosely packed
  • ½ small onion, chopped small
  • 4 limes-juiced
  • 1 cup fresh cilanatro, loosely packed
  • 3 tablespoons sugar
  • 2 tablespoons Dijon mustard
  • 2 garlic cloves, minced
  • ½ tablespoon chili powder
  • ½ cup olive oil

Directions

Pulse the spinach in a processor 3-4 times to finely chop. In a large bowl, add chickpeas, onion, and spinach. In processor add lime juice, cilantro, sugar, mustard, garlic, chili powder, and olive oil. Process until it comes together as a dressing, 30-45 seconds.
Pour over chickpea mixture and stir. Season with salt and pepper. Let stand 10 minutes or refrigerate over night to blend the flavors.
