Ingredients

  • 15 ounces chickpeas, drained and rinsed
  • 1 tablespoon whold grain mustard
  • ¼ cup mayonnaise
  • 1.5 tablespoons umeboshi vinegar
  • 2 teaspoons celery seeds
  • ¼ cup celery , chopped
  • 2 tablespoons sliced scallions
  • cayenne pepper, pinch
  • freshly ground black pepper

Directions

Pulse the chickpeas in processor a few times. Add remaining ingredients and pulse a few times to blend. Put between bread, add lettuce and serve.
