Ingredients
- 15 ounces chickpeas, drained and rinsed
- 1 tablespoon whold grain mustard
- ¼ cup mayonnaise
- 1.5 tablespoons umeboshi vinegar
- 2 teaspoons celery seeds
- ¼ cup celery , chopped
- 2 tablespoons sliced scallions
- cayenne pepper, pinch
- freshly ground black pepper
Directions
Pulse the chickpeas in processor a few times. Add remaining ingredients and pulse a few times to blend. Put between bread, add lettuce and serve. |
