Ingredients
- 4 boneless skinless chicken breast
- ¼ teaspoon salt
- 1 tablespoon oil
- 2 medium onions, chopped
- ½ cup low sodium chicken broth
- 2 jalapeno peppers, minced
- 2 teaspoons cumin
- 3 ounces cream cheese, cubed
- ¼ cup sour cream
- 3 plum tomatoes, seeded and chopped

Directions
Sprinkle chicken with salt. In a large skillet, brown the chicken in the oil. Add onions, broth, peppers and cumin. Bring to a boil. Reduce heat, cover and simmer for 5-7 minutes or until chicken is done. Remove chicken and keep warm. Stir in cream cheese and sour cream to the mixture. Add tomatoes and serve over rice. |
