Ingredients

  • 4 boneless skinless chicken breast
  • ¼ teaspoon salt
  • 1 tablespoon oil
  • 2 medium onions, chopped
  • ½ cup low sodium chicken broth
  • 2 jalapeno peppers, minced
  • 2 teaspoons cumin
  • 3 ounces cream cheese, cubed
  • ¼ cup sour cream
  • 3 plum tomatoes, seeded and chopped
  • rice

Directions

Sprinkle chicken with salt. In a large skillet, brown the chicken in the oil.
Add onions, broth, peppers and cumin. Bring to a boil. Reduce heat, cover and simmer for 5-7 minutes or until chicken is done. Remove chicken and keep warm.
Stir in cream cheese and sour cream to the mixture. Add tomatoes and serve over rice.
