Ingredients

  • 2 whole chickens
  • 5-7 stalks celery-cut in half
  • 2 large onions-quartered
  • 4 carrots-cut in half
  • 4 tablespoons salt
  • 1 tablespoon pepper
  • 2 bay leaves

Directions

In a large soup pot, put all the ingredients in and add water. The pot should be 3/4 full. Turn on high, bring to boil and simmer for 4-6 hours. Add more water if needed. Strain the broth and return to soup pot. Optional: debone and cut chicken into bite size pieces and add to broth. Cut carrots and celery and add to broth.
