Ingredients

  • 8 ounces whole wheat spaghetti noodles
  • 4 green onions, thinly sliced
  • 2 cloves garlic-minced
  • 6 tablespoons butter
  • 4 tablespoons olive oil
  • 8 ounces skinless boneless chicken breast, cut in bite size pieces
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • 4 tablespoons lemon juice-fresh
  • 2 tablespoons minced fresh parsley
  • 1 cup chopped tomatoes

Directions

Cook pasta according to directions. Meanwhile, in a large skillet, saute onion and garlic in the butter and oil until garlic is tender. Sprinkle salt and pepper on chicken, add to skillet. Cook for 3-4 minutes. Add tomatoes, lemon juice and parsley. Serve over noodles.
