Ingredients

  • 1.5 cups unbleached flour
  • 1.5 cups spelt flour
  • ½ teaspoon yeast
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1.5 cups warm water

Directions

Sift flours, yeast, salt, and sugar in a very large bowl. Add the warm water and mix until creates a shaggy mixture. Cover and let sit for 12-18 hours.
Pour out onto a floured surface and shape into a mound. Let sit while your oven preheats.
Place your Dutch oven and lid in the oven and preheat all to 400°.
Drop mound in pan and replace lid. Cook for 30 minutes. Remove lid, and cook another 10 minutes.
