Ingredients

  • 1 ¾ cups warm water (100-110°)
  • 2 envelopes yeast
  • 2 teaspoons salt
  • 5-5 ½ cups flour

Directions

1. Place 1/2 cup warm water in large bowl. Sprinkle in yeast, stir to dissolve. Add remaining water, salt and 2 cups of flour, blend well. Stir in enough of the remaining flour to make soft dough. Knead on lightly floured surface until smooth-6-8 minutes. Place in greased bowl, turning to grease the top of the dough. Cover, let rise in warm place until doubled in size, about 20-40 minutes.
2. Punch down dough. Remove dough to lightly floured surface, divide in half. Roll each to 12 inch circle. Roll up each circle to make a jelly roll loat. Cover, let rise in warm place until doubled in size, 20-40 minutes.
3. Lightly dust loaves with flour, with sharp knife, make 3-4 diagonal slashes across the top of each loaf. (about 1/4 inch deep)
4. Bake at 400° for 25 minutes. Cool on wire rack.
