Ingredients
- 2 cups flour
- ⅓ cup brown sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 egg-beaten
- 1 cup 2% milk
- ½ cup canola oil
- 2 cups finely chopped peeled apples
- 8 ounces cream cheese, softened
- 2 tablespoons maple syrup
- 2 teaspoons grated orange peel
- ¼ teaspoon ground nutmeg
- ¼ cup flour
- ¼ cup old-fashioned oats
- ¼ cup brown sugar
- ¼ teaspoon cinnamon
- 3 tablespoons cold butter
Directions
In a large bowl, combine the flour, sugar, powder, salt and cinnamon. In another bowl, combine egg, milk and oil. Stir into dry ingredients just until moistened. Fold in the apples. Fill cupcakes tins (greased or paper lined) three quarters full. In small bowl, beat cream cheese, syrup, orange peel and nutmeg. Drop by spoonful into cupcake center. Topping-in a small bowl combine flour, oats, sugar and cinnamon. Cut in the butter until crumbly. Sprinkle over filling. Bake at 400° for 16-20 minutes or until done. Cool 5 minutes. Makes 1 dozen. |
