Ingredients
- 1 ½ cups milk
- 8 tablespoons butter
- ½ cup warm water
- 1 package yeast
- 2 ⅓ cups flour
- ½ teaspoon salt
- 1 tablespoon sugar
- 2 eggs
- ¼ teaspoon baking soda
- 1 ½ cups minced pepperoni
- 1 cup Parmesan Cheese, shredded
- ⅔ cup mozzarella, shredded-fresh
- extra Parmesan/mozz cheese, for top
- Marinara sauce , for top
Directions
For waffles: combine butter and milk in saucepan heat until warm and butter is melted. Combine warm water (110-115°), yeast and sugar and let stand for 10 minutes. Combine flour and salt. Add milk/butter mixture and the yeast mixture. Stir with a wooden spoon until combined. Cover with plastic wrap and let stand 1 1/2 hours. Uncover and add eggs and baking soda. Add the minced pepperoni, 1 cup Parmesan cheese and 2/3 cup diced mozzarella cheese. Cook in a waffle iron that has been brushed with oil. Keep warm in a 200° oven while finishing all the waffles. To serve: top with marinara sauce and the extra cheeses. |
