Ingredients

  • 4 Idaho baked potatoes
  • light sour cream
  • light butter
  • salt
  • low fat grated cheddar cheese
  • diced bacon bits
  • sliced green onions

Directions

1. Preheat oven to 375°. Wash potatoes and dry. Prick with fork. Bake for 40 minutes, flip over and bake another 40-45 minutes. Let cool one hour. Cut 1/4 of the top of the potato off and carefully scoop out the potato. Place the scooped potatoes and all other ingredients (with the exception of the onions) in bowl and mash together. Preheat oven to 425°. Add the potatoes and bake for 3
2. 20-25 minutes. Top with chopped green onions.
