Ingredients
- 10 ounces fresh cheese tortellini
- 10 ounces fresh spinach cheese tortellini
- ½ cup fresh parsley, minced
- ½ pound salami, cubed
- ½ pound Havarti cheese, cubed
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 green onions, chopped
- 6 tablespoons red wine vinegar
- 2 teaspoons dried basil
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
- ½ teaspoon coarsely ground black pepper
- 2 cloves garlic, minced
- 1 cup olive oil
Directions
Cook tortellini al dente and drain. Combine all ingredients in a large bowl. In blender combine dressing ingredients. Pour over salad and chill at least one hour. |
