Ingredients

  • 10 ounces fresh cheese tortellini
  • 10 ounces fresh spinach cheese tortellini
  • ½ cup fresh parsley, minced
  • ½ pound salami, cubed
  • ½ pound Havarti cheese, cubed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 4 green onions, chopped
  • 6 tablespoons red wine vinegar
  • 2 teaspoons dried basil
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon coarsely ground black pepper
  • 2 cloves garlic, minced
  • 1 cup olive oil

Directions

Cook tortellini al dente and drain. Combine all ingredients in a large bowl. In blender combine dressing ingredients. Pour over salad and chill at least one hour.
