Ingredients

  • 2 large onions, thinly sliced
  • 6 tablespoons butter, solftened, divided
  • 2 teaspoons sugar
  • 1 ½ pounds beef tenderloin
  • 3 teaspoons coarsely ground pepper
  • 2 garlic cloves-minced
  • ¾ teaspoon salt
  • 2 teaspoons horseradish
  • baquette bread, cut into 30 slices

Directions

In large skillet over medium-low heat, cook onions in 3 tablespoons butter for 5 minutes. Add sugar; cook over low heat for 30-40 minutes until onions are golden brown, stir frequently.
Rub 1 tablespoon oil over tenderloin. Combine the pepper, garlic and salt, rub over beef. In a large skillet, brown beef on all sides. Transfer to baking sheet. Bake at 425° for 20-25 minutes. Let stand for 10 minutes.
In a small bowl, beat horseradish and remaining butter until blended. Spread over bread slices. Place on baking sheet and broil 4 inches from heat for 2-3 minutes.
Thinly slice beef; place on bread. Top with onions.
