Ingredients

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 envelope low sodium taco seasoning
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 ½ cups shredded sharp cheddar cheese
  • avocado-chopped
  • chopped tomatoes
  • sliced green onions
  • shredded cheese
  • shredded lettuce

Directions

Prepare pasta according to the box directions. Brown ground beef in a skillet and drain. Return beef to skillet, adding taco seasoning and 3/4 cup water. Bring to a boil, cooking and stirring occasionally, approximately 7 minutes. Remove from heat. Melt butter in a saucepan over medium-low heat. Whisk in flour until smooth and gradually add the milk, cooking and stirring constantly approximately 5 minutes or until thick. Remove from heat. Stir in cheese and cooked pasta. Serve immediately with the toppings.
