Ingredients

  • ¾ cup burghul wheat
  • 2 bunches parsley, chopped
  • 1 cup mint, finely chopped
  • 1 large bunch green onions, chopped
  • 2-3 teaspoons salt
  • dash pepper
  • ½-⅔ cup lemon juice
  • ½ cup oil
  • 3-4 medium tomatoes, chopped

Directions

Soak burghul wheat in water for 20 minutes. Add remaining ingredients. Chill at least one hour.
