Ingredients

  • 2 tablespoons olive oil
  • ½ teaspoon peppered seasoned salt
  • ¼ teaspoon cumin
  • ½- whole red onion-quartered
  • 2 yellow summer squash, halved, cut into 1/2 in slices

Directions

Heat grill. In bowl, combine 1 tablespoon of oil and HALF of the salt and cumin. Add onion to coat.

When grill is ready, put onion mixture in a grilling pan. Cook approximately 10 minutes, stirring frequently.

In the same bowl, add squash, remaining oil and spices. Toss to coat.

Add squash mixture to onion mixture, cooking about five minutes, stirring frequently.
