Ingredients

  • 1 pound ground beef
  • 1 ounce taco seasoning, package
  • ¾ cup water
  • 2 teaspoons chili powder
  • ½ cup cooked rice
  • ¼ teaspoon garlic salt
  • ¼ teaspoon salt
  • teaspoon pepper
  • 16 ounces tomato sauce, divided
  • 3 large red bell pepper
  • 6 Colby-Jack cheese, 1 inch cubes

Directions

Preheat oven to 350°. Grease a 9x13 pan. Place ground beef in skillet and brown meat. Drain, stir in taco seasoning, water, chili powder, cooked rice, salt, garlic salt, pepper and 8 ounces of tomato sauce. Bring to a boil, reduce to low and simmer 20 minutes.
Cut the peppers in half, lengthwise, and remove stems, seeds etc. Place in a steamer for 3 minutes to soften.
Place peppers in baking dish and fill with meat filling. Press 1 cube of cheese in the center of each filling. Spoon 8 ounces of tomato sauce over peppers.
Cover with foil and back 25-30 minutes.
