Ingredients

  • 2 leeks-chopped
  • 8 ounces shitake mushrooms, sliced
  • 8-10 ounces thinly sliced pork or chicken
  • 3-4 cloves garlic-grated
  • 1 inch piece ginger-grated
  • 8 ounces whole wheat spaghetti noodles, cooked
  • zest of lime and lime juice
  • cup Tamari, premium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons Sriracha sauce
  • fresh basil
  • fresh cilantro
  • shredded lettuce
  • hot pepper flakes

Directions

In 2 tablespoons of hot oil, cook meat and remove it from pan. Reheat and add leeks and mushrooms for 1-2 minutes. Add garlic, ginger, zest and lime juice, stirring for 2 minutes. In small bowl, whisk together premium soy sauce, honey and Sriraha sauce and add to pan. Heat through, add meat back into pan. Add noodles and heat through. Mix in cilantro, basil and lettuce. Serve immediately.
