Ingredients

  • 2 tablespoons oil
  • 1 cup rice
  • ½ cup chopped green bell pepper
  • cup chopped onion
  • 2 cups chicken broth
  • 10 ounces can of chopped tomato with green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon salt

Directions

Heat oil and saute rice, onion and green pepper. Add remaining ingredients, cover and simmer 20-30 minutes
