Ingredients
- 2 pounds Bay Shrimp
- 1 cup fresh lime juice
- 2 cups cherry tomatoes, chopped
- ½ cup red onion, chopped
- 2 jalapeno, chopped
- 1 bunch cilantro, chopped
- 2 avocado-cubed
- ½ cup green olives with pimento, sliced
- ½ cup cucumber , peeled, seeded, chopped
- ¼ cup capers
- ½ cup ketchup
- 2 tablespoons red wine vinegar
- ¼ cup extra-virgin olive oil
- lettuce leaves or chips
Directions
Marinade the shrimp in the lime juice for one hour. Drain and discard the lime juice. Combine the remaining ingredients. Serve with chips or lettuce leaves. |
