Ingredients

  • 3 teaspoons sesame oil
  • ¾ pound small asparagus
  • ½ pound peeled shrimp
  • 1 ½ tablespoons grated ginger
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons fresh lime juice
  • 2 jalapeno, thinly sliced
  • ½ cup chopped onion
  • 2 cloves garlic-grated
  • ¼ cup basil leaves, thinly sliced

Directions

Heat 2 teaspoons of oil over medium heat. Add asparagus and cook 7-8 minutes. Remove from pan and set aside. Add garlic and ginger and saute for one minute. Add onion and jalapeno and cook until tender. Add shrimp and cook approximately 4 minutes. Add remaining ingredients and add back the asparagus. Heat through and serve over rice if desired.
