Ingredients
- 3 teaspoons sesame oil
- ¾ pound small asparagus
- ½ pound peeled shrimp
- 1 ½ tablespoons grated ginger
- 3 tablespoons low-sodium soy sauce
- 3 tablespoons fresh lime juice
- 2 jalapeno, thinly sliced
- ½ cup chopped onion
- 2 cloves garlic-grated
- ¼ cup basil leaves, thinly sliced
Directions
Heat 2 teaspoons of oil over medium heat. Add asparagus and cook 7-8 minutes. Remove from pan and set aside. Add garlic and ginger and saute for one minute. Add onion and jalapeno and cook until tender. Add shrimp and cook approximately 4 minutes. Add remaining ingredients and add back the asparagus. Heat through and serve over rice if desired. |
