Ingredients
- 3 Bartett pears-firm, 1/2 in thick wedges
- ¼ cup red wine vinegar
- ½ cup seedless raspberry preserves, 10 oz-seedless
- 2 tablespoons fresh basil, chopped
- 1 garlic clove, pressed
- ½ teaspoon salt
- ½ teaspoon pepper
- ⅓ cup oil
- 5 ounces mixed greens
- ½ small red onion, thinly sliced
- 2 cups fresh raspberries
- ¾ cup honey-roasted cashews
- 4 ounces goat cheese, crumbled
Directions
Grill pear wedges, 1-2 minutes on each side. Whisk together vinegar, preserves, basil, garlic, salt, and pepper in a bowl. Constantly stirring, add oil in a slow steady stream. Mix remaining ingredients, add dressing, and serve immediately. Serves 6-8. |
