Ingredients

  • 3 Bartett pears-firm, 1/2 in thick wedges
  • ¼ cup red wine vinegar
  • ½ cup seedless raspberry preserves, 10 oz-seedless
  • 2 tablespoons fresh basil, chopped
  • 1 garlic clove, pressed
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • cup oil
  • 5 ounces mixed greens
  • ½ small red onion, thinly sliced
  • 2 cups fresh raspberries
  • ¾ cup honey-roasted cashews
  • 4 ounces goat cheese, crumbled

Directions

Grill pear wedges, 1-2 minutes on each side.
Whisk together vinegar, preserves, basil, garlic, salt, and pepper in a bowl. Constantly stirring, add oil in a slow steady stream.
Mix remaining ingredients, add dressing, and serve immediately. Serves 6-8.
