Ingredients

  • ¾ pound russet potatoes, peeled and chopped
  • cup Greek yogurt
  • 1 tablespoon EVOO
  • 1 tablespoon green onion, minced
  • 1 teaspoon lemon zest
  • salt, to taste

Directions

Boil potatoes until done. Drain and return to pan. Add remaining ingredients and mash. Serve immediately.
