Ingredients
- ¾ pound russet potatoes, peeled and chopped
- ⅓ cup Greek yogurt
- 1 tablespoon EVOO
- 1 tablespoon green onion, minced
- 1 teaspoon lemon zest
- salt, to taste
Directions
Boil potatoes until done. Drain and return to pan. Add remaining ingredients and mash. Serve immediately. |
