Ingredients

  • ½ cup flour
  • 2 large eggs
  • ¼ cup mayonnaise
  • 3 slices of hearty white bread
  • 16 saltine crackers
  • 1 pound pork tenderloin
  • salt and pepper
  • oil for frying

Directions

Season the pork and cut into four pieces. Pound them on the cut side to 1/4 inch thick, Combine the eggs and mayo. In porcessor, process bread and crackers. Dredge in flour, then egg mixture, and the crumbs. Press the crumbs on the meat. Let dry 5 minutes or refrigerate up to one hour.
Fry patties two at a time, 2 minutes on each side.
