Ingredients
- ½ cup flour
- 2 large eggs
- ¼ cup mayonnaise
- 3 slices of hearty white bread
- 16 saltine crackers
- 1 pound pork tenderloin
- salt and pepper
- oil for frying
Directions
Season the pork and cut into four pieces. Pound them on the cut side to 1/4 inch thick, Combine the eggs and mayo. In porcessor, process bread and crackers. Dredge in flour, then egg mixture, and the crumbs. Press the crumbs on the meat. Let dry 5 minutes or refrigerate up to one hour. Fry patties two at a time, 2 minutes on each side. |
