Ingredients

  • 4 boneless pork chops (about 2 pounds)
  • 2 tablespoons butter or margarine
  • Salt and pepper to taste
  • 2-3 tablespoons Dijon mustard
  • ¼ cup chopped onion
  • 1-½ teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
  • Hot cooked noodles
  • ¾ cup sour cream
  • 1 teaspoon browning sauce, optional

Directions

In a large skillet, brown pork chops on both sides in butter. Season with salt and pepper. Add mustard, onion and tarragon; cover and simmer for 10-12 minutes or until pork is no longer pink. Remove chops to a platter of noodles and keep warm. To the skillet, add sour cream and browning sauce if desired; heat through (do not boil). Spoon over pork and noodles. Yield: 4 servings.
