Ingredients
- 2 teaspoons cumin
- 1 teaspoon cumin seeds-crushed
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 pounds pork tenderloin
- 1 Tablespoon olive oil
- 1 cup light sour cream
- 1 tablespoon chipotle chile in adobo sauce, chopped
Directions
1. Combine first five ingredients. Rub over pork. Heat oil in cast iron skillet over medium high heat. Add pork, cook 4 minutes or until browned on all sides. Bake at 425° for 12 minutes or until the temp is 155°. Remove pork from oven and let stand 5 minutes before slicing. |
2. Combine sour cream and chopped pepper mixture and serve over pork. |
