Ingredients

  • 2 teaspoons cumin
  • 1 teaspoon cumin seeds-crushed
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 pounds pork tenderloin
  • 1 Tablespoon olive oil
  • 1 cup light sour cream
  • 1 tablespoon chipotle chile in adobo sauce, chopped

Directions

1. Combine first five ingredients. Rub over pork. Heat oil in cast iron skillet over medium high heat. Add pork, cook 4 minutes or until browned on all sides. Bake at 425° for 12 minutes or until the temp is 155°. Remove pork from oven and let stand 5 minutes before slicing.
2. Combine sour cream and chopped pepper mixture and serve over pork.
