Ingredients

  • 3 quarts cooked beets
  • 2 cups sugar
  • 2 sticks cinnamon
  • 1 tablespoon whole allspice
  • 1 tablespoon whole cloves
  • 1 ½ teaspoons salt
  • 3 ½ cups vinegar
  • 1 ½ cups water

Directions

Cook beets in boiling water until ready to peel. Peel and slice beets, mix brine ingredients, add sliced beets and one onion sliced. Boil until tender and can in jars.
