Ingredients

  • 2 cups flour
  • 1 teaspoon salt
  • ¾ cup shortening
  • 1 egg
  • 3 tablespoons cold water
  • 5 peaches-peeled and sliced
  • 1 cup sugar
  • cup flour
  • 1 cup whipping cream
  • ½ teaspoon cinnamon

Directions

Preheat oven to 425°. Combine the 2 cups flour and salt. Cut in shortening. Whisk together water and egg. Add to flour mixture with hands until it forms a ball. Roll out to fit a 9 x 13 pan. Combine the sugar and 1/3 cup flour. Add the peaches until mixed. Put crust in the 9 x 13 pan. Add the peach mixture. Pour over whip cream and sprinkle with the cinnamon. Bake at 425° for 20 minutes. Reduce oven to 350° and continue to bake for 25 minutes. Let set at least 25 minutes. Refrigerate leftovers.
