Ingredients
- 16 ounces penne pasta, cooked al dente
- 29 ounces diced canned tomatoes, drained
- 1 cup mozzarella cheese, cubed
- 1 small cucumber, peeled, seeded and chopped
- 1/2 of green pepper, finely chopped
- 3-5 green onions, finely chopped
- ¾ cup extra-virgin olive oil
- 1 tablespoon garlic, chopped
- 1 teaspoon crushed red pepper
- ½ teaspoon black pepper
- ½ teaspoon salt
Directions
Combine all salad ingredients until blended. Combine dressing and pour over salad at least one hour before serving. |
