Ingredients

  • 16 ounces penne pasta, cooked al dente
  • 29 ounces diced canned tomatoes, drained
  • 1 cup mozzarella cheese, cubed
  • 1 small cucumber, peeled, seeded and chopped
  • 1/2 of green pepper, finely chopped
  • 3-5 green onions, finely chopped
  • ¾ cup extra-virgin olive oil
  • 1 tablespoon garlic, chopped
  • 1 teaspoon crushed red pepper
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Directions

Combine all salad ingredients until blended. Combine dressing and pour over salad at least one hour before serving.
