Ingredients

  • ½ cup dijon mustard
  • ¼ cup apple juice
  • 2 cloves garlic-minced
  • 2 cups bread crumbs
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter-melted
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 tablespoon dried parsley
  • 8 boneless skinless boneless chicken breast

Directions

Preheat oven to 375°. Line a 13x9 in pan with foil. In shallow pan combine mustard, juice and garlic. In other pan, mix the crumbs, cheese, parsley, butter, salt, pepper and parsley flakes. Coat chicken in mustard mixture, then roll in cheese mixture. Place in prepared pan, bake for 20-30 minutes.
