Ingredients

  • 8 ounces wide flat rice noodles
  • 2 tablespoons brown sugar
  • 2 tablespoons fresh lime juice
  • 3 tablespoons soy sauce
  • Sriracha sauce, squirt of
  • 2 teaspoons vegetable oil
  • 3 green onions-divide wh/gr parts, green and white parts sliced
  • 2 garlic clove, minced
  • 2 eggs, beaten
  • ½ cup cilantro-fresh
  • extra lime wedges

Directions

Soak noodles in hot water, drain. Whisk together sugar, juice, soy, and Sriracha Sauce. In a large skillet, heat oil over medium-high heat. Add green onions (white part only) and garlic cooking for 30 seconds. Add eggs, continue until eggs are cooked. Remove and set aside. Add noodles, green onion greens, and sauce. Cook, tossing constantly for one minute. Add egg mixture and toss to coat and break up egg mixture. Top with cilantro and lime wedges.
