Ingredients

  • 1 ½ cups flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup bananas, mashed
  • 1 cup buttermilk
  • ½ cup brown sugar
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla
  • 1 large egg
  • ½ cup crushed pineapple in own juice, drained
  • cup flaked coconut
  • 2 tablespoons coconut-flaked
  • 1 tablespoon sugar
  • 1 tablespoon oats

Directions

Preheat oven to 400°. Combine flour, oats, powder, soda and salt. Make a well in the center, mix in bowl the banana, milk, br sugar, oil, vanilla and egg, add to flour mixture and stir until blended. Add, pineapple, coconut and put into 12 muffin tins sprayed with nonstick Pam. Combine the topping ingredients and add to the top of each muffin. Bake for approximately 18 minutes.
