Ingredients

  • 2 cups Elbow mac, uncooked
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • ¼ cup onion, minced
  • salt and pepper to taste
  • ¼ pound processed cheese
  • ¼ pound cheddar cheese, shredded
  • ¼ pound Swiss cheese, shredded

Directions

Cook macaroni and drain. Melt butter in saucepan over medium high heat. Stir in flour to form a paste. Add milk, stir until thickens.
Spread 1/2 of the mac into the bottom of a 9x13 greased baking dish. Then layer 1/2 the grated onion, half of the salt and pepper, and the cheeses. Repeat layers, pour over the white sauce, top with small pats of butter.
Bake at 350° for 45 minutes.
