Ingredients

  • 1 cup butter
  • 3 egg yolk
  • 1 tablespoon heavy cream
  • cayenne pepper, dash
  • ½ teaspoon salt
  • 1 tablespoon lemon juice

Directions

Melt butter. In processor combine yolks, cream, salt and cayenne pepper until smooth. With machine running, stream in 1/2 butter, then lemon juice and other 1/2 butter.
