Ingredients
- 8 chicken breast cutlets
- 1 pint cherry or grape tomatoes, halved
- 4 ounces crumbled feta cheese
- ½ cup mint leaves, cut but not minced
- ⅓ cup greek olives
- 1 tablespoon olive oil
Directions
Mix together tomatoes, cheese, mint, olives, and 1 tablespoon oil. Season with salt and pepper. Season chicken with salt and pepper. Cook in fry pan in approximately 2 tablespoons of olive oil until done. Turning once during the cooking time. Plate chicken, top with tomato mixture |
