Ingredients

  • 8 chicken breast cutlets
  • 1 pint cherry or grape tomatoes, halved
  • 4 ounces crumbled feta cheese
  • ½ cup mint leaves, cut but not minced
  • cup greek olives
  • 1 tablespoon olive oil

Directions

Mix together tomatoes, cheese, mint, olives, and 1 tablespoon oil. Season with salt and pepper.

Season chicken with salt and pepper. Cook in fry pan in approximately 2 tablespoons of olive oil until done. Turning once during the cooking time.

Plate chicken, top with tomato mixture
