Ingredients

  • 1 ¾ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 egg whites
  • ¾ cup coconut or whole milk
  • 1 teaspoon vanilla
  • ½ teaspoon almond extract
  • ¾ cup sugar
  • 1 stick unsalted butter
  • 1 cup sweetened shredded coconut
  • 8 ounces cream cheese, softened
  • 1 stick unsalted butter-softened
  • 2 ounces white chocolate, melted
  • juice of 1/2 a lime
  • 2 cups powdered sugar
  • 1.5 cups sweetened shredded coconut

Directions

Sift together first three ingredients. Mix next four ingredients. Beat sugar and butter for approximately four minutes. Add flour mixture, alternating with liquid. Start and end with the flour mixture. Add coconut. Put into 12 lined muffin tins and bake at 350° for 25-30 minutes. Cool in pan 5 minutes.
Frosting, beat cream cheese and butter until smooth. Add chocolate and juice. Add sugar and beat until smooth. Frost and top with coconut.
