Ingredients

  • 2 tablespoons garlic powder
  • 1 tablespoon kosher salt
  • 2 teaspoons cayenne pepper
  • 2 teaspoons dried thyme leaves
  • 2 teaspoons dried oregano
  • 2 teaspoons ground fennel
  • 6 red potatoes, quartered
  • 1 onion-quartered
  • 8 roma tomatoes
  • 4 ears sweet corn-shucked and quartered
  • 12 jumbo shrimp, deveined,, shells left on
  • 2 links andouille sausage cut into 4 pieces each
  • 16 littleneck clams
  • 16 ounces lager beer
  • ¼ cup chopped parsley

Directions

1. Combine the seasonings in a bowl and set aside.
2. Line a large bowl with heavy duty foil. Divide all ingredients equally into four foil packs.
3. Close the foil packets tightly.
4. Grill or cook over an open fire for 20-25 minutes.
