Ingredients

  • 4 chicken breast
  • salt and ground black pepper to taste
  • 2 tablespoons olive oil
  • ¼ cup dry white wine or chicken broth
  • ½ cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon tarragon

Directions

Season chicken with salt and pepper. Brown in the oil, turning once. Remove chicken, add wine and bring to a boil. Reduce to a simmer, add the cream, mustard and spice. Add back chicken and any juices. Simmer until chicken is done, approximately 10 minutes.
